Our Culinary team often joke about searching for the most difficult way, to do everything. We use different strategies than our competitors, in orders to find the best.
We shop the ethnic markets in Atlanta weekly, and we harvest our organic vegetables on our own plot right here in Highlands NC at Marker Mountain Farms...

We have the freshest fish in the region. We never ask for any type of fish in advance, but rather the freshest saltwater catch of the day, that is in transit from the coast. Our Chefs receive the fish around 2 pm, Where we discover what kind of fish we're preparing, proudly displaying it on ice, and creating the nights specials.
